So is that photo sufficiently arty and well styled and indicative of the contents or what? That soup looks so good I want a bowl of it right now. Again, a recipe that keeps getting relegated to the bottom of my file because somehow sweet potato soup conjures up a picture of stodgy gloop that goes down all in one piece. Gross. Ha ha. Rest assured all, this is so yummy you will be scooping it into your greedy little mouths and wanting seconds, even my unnamed non soup eating friend!
It is dairy free, almost fat free, so you could actually lose weight as you eat this soup. What more could you ask for. Enjoy
Sweet Potato and onion and coriander soup
Serves 4
1T olive oil
2 garlic cloves, crushed
2cm fresh ginger, finely grated
1 large onion, sliced
10ml ground cumin (recipe called for 15ml but that is a lot!)
500g sweet potatoes, peeled and roughly chopped
1 litre vegetable stock
50g fresh coriander,chopped
salt and pepper to taste
Fry garlic, ginger, onion and cumin in1T olive oil until soft. Add sweet potatoes and 700ml stock and bring to the boil. Cook till potatoes are soft, about 20 minutes. Allow to cool slightly, add coriander and blend till smooth. Add the remaining stock to thin down as needed. (You may not use it all). Season, reheat and gobble down. Try some HOMEMADE bread with it, it only enhances the experience!!
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
