So, what do you cook for supper when you walk in the door at 6.30pm and you literally have 15 minutes to cook and to eat? Well, provided you managed a stop at the grocery store, Pasta la Hasta (Translated: HASTY pasta) (Marion's dictionary)...is the answer. Buy fresh pasta which only requires 4 minutes to boil, if you were clever and first boiled the water in the kettle. While pasta is boiling, you fry the topping and Voila. Hasty and tasty food that goes down a treat, and if you are not hasty I daresay a glass of chilled white wine would enhance the experience.
Admittedly the grocery store was Woolworths, so it was one stop shopping.
Pasta la Hasta
Serves 2 with ease
1x 200g packet fresh pasta, tagliatelli always works for me
2T olive oil or butter
1 clove garlic, crushed
1 x punnet mushrooms
1 x tub grilled artichokes
handful baby tomatoes, halved
salt and pepper
Optional: 50g feta, crumbled
For 2 people, only use half the packet of pasta, freeze the rest. Otherwise add more topping ingredients. Cook pasta according to packet instructions.
Fry mushrooms and garlic rapidly, so they fry nicely, season generously. Tip tub of artichokes into pan, add tomatoes, fry 30 seconds and add pasta!!! If you are using the feta add it to the topping once the heat is turned off. Hasty indeed.

You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
