Grape Foccacia

So, besides being too busy, I have been trying lots of new recipes, but not finding any that really appealed. I planned to post the beans and marrows pictured above, but decided the bread was more of a winner, so its an accidental recipe you have here.

I squirmed a bit at the idea of the grapes, and then was REALLY pleasantly surprised. It is a bit like having built in jam....but nicer and not as sweet.

                                             Grape Foccacia
1T chopped rosemary leaves
1 clove garlic, crushed
2T olive oil
400g Stone ground flour, sieved
10g instant yeast
1T honey/sugar
10ml salt
200ml warm water
200g washed, seedless grapes

Mix all the ingredients - excluding the grapes, together in a large bowl. Mix together then knead on a smooth surface  for about 5 minutes till a nice even consistency. (The dough should be fairly soft but not sticky. Rather use a bit more water if in doubt) You can do this in your mixer if you prefer. Return to bowl and gently knead grapes through. Oil top of dough and leave to rise in warm place till doubled in size. Oil a 22cm round cake tin, press dough in, drizzle with olive oil, sprinkle with a little coarse salt and more Rosemary leaves. Cover and leave to rise. Preheat oven to 200C. Bake bread for 30 minutes or until brown and hollow when tapped.
