These mushrooms are my current favourite thing to eat. Beware if you should visit for a meal, you WILL be eating them. Incredibly quick to prepare and honestly you can marinate them for 5 minutes or an hour with no ill effects. I use them as a salad tossed with some rocket leaves, or as an addition to a salad platter, or you can eat them just like that as a "vegetable". Try some exotic mushrooms. Woolies does those lovely mixed punnets and they do make the salad more attractive. However, whatever garden variety tickles your fancy I am sure you will be pleasantly surprised at the delicious result.
Marinated Mushrooms
200g Mixed Mushrooms, sliced
50ml white wine vinegar
50ml olive oil
30ml chives, chopped
salt and pepper to taste
Combine all ingredients and allow to stand for 30 minutes. Voila!!
