Every Vegetable Salad - scrumptious and beautiful

Huge pic, but its just so pretty and colourful, I have to use fair means or foul to persuade you to attempt this one. Requires a bit of effort if you use all the ingredients I used, but a bit of forward planning makes it simple. The salad really is a meal in itself, but goes well with anything you can imagine. It is summer, if we ignore the snow we had Sunday when I made the salad...so lots more salad meals are likely to feature in our repertoire, especially when we have those hot, hot days where the thought of food requires too much effort. Sorry, if you are in the UK, you won't be interested in this food:)

So, salad recipe? I am going to "chat" through this one as it sort of grows as it goes along.
2 red or yellow peppers - chargrilled, place in plastic bag to sweat, peel skins off, remove pips. Slice into strips and marinate in juice of half a lemon, 4T olive oil, 1 clove garlic, crushed,  salt and pepper and a sprig of Rosemary. I added some olives to the mix, purely to add some nice flavour to the olives, and left it overnight. We made pizza's, so the peppers just got grilled then, no extra oven time. (Lasts quite a while in the fridge).
Quarter some red onions or peel some shallots, toss in 1T olive oil, add a dash of balsamic vinegar, put in hot oven for 5 minutes and turn oven off and leave to 'roast' overnight or at least 2 hours.
Roast a few walnuts or pecans for 5 minutes in a hot oven, very optional but nice.Toss some asparagus and green beans (quantity depends on size of salad)in a little olive oil, grill in pan for a few minutes over a high heat to also vaguely char grill them. Toss back into the oil, with a grating of lemon zest, squeeze of lemon juice, salt and pepper and a dash of chilli if wanted.

To assemble, fill a plate with your choice of lettuce leaves, use some interesting ones! Top with all the cooked vegetables, some baby tomatoes, feta and nuts. As all your vegetables are flavoured, you should not require any additional dressing, but feel free to pour any excess juices over the top of the salad. Add avo or whatever other veg you desire, as always, take some risks!
