Bunny Chow

Disclaimer: NO bunnies were hurt in the construction of this recipe. In fact, no bunnies were even seen.
So, legalities aside, who knows what bunny chow is? A whole plate of carrots maybe? Actually, you take half a loaf of white unsliced bread, hollow it out and fill it with curry. I have never quite figured out how you then proceed to eat it. Sounds messy.
At any rate, this curry recipe is good if you want to try it. I compromised and served the curry in a bowl with a hefty hunk of naan bread on the side for scooping and dunking. The gem squash was to appease my hubbies desire for something fresh!!!
By the way, if using chillies, the smaller they are, the hotter. Sometimes I am lucky enough to find lovely big, fat chilli's at the local stores. Don't like HOT chillies.

                          Bunny chow with sugar bean and vegetable curry 
Serves 4 ravenous or 6 normal people

10ml olive oil
1 onion, roughly chopped
1 chilli, chopped ( I used a very mild one)
2 cloves garlic, crushed
2cm piece fresh ginger, peeled and grated
1 stick cinnamon
10ml Masala (add 5ml more if want more heat)
5ml each tumeric and ground cumin
10ml ground coriander
1/2t ground cardamom
5ml black mustartd seeds
3T chutney or tamarind paste
500g mixed vegetables - eg potato, carrot, peppers, cauliflower,broccoli, peeled and thickly sliced
150g green beans, halved
1 can chopped tomatoes
1 cup vegetable stock
1 can sugar beans, drained and rinsed
salt and pepper
Bread to serve; or rice or couscous (The white "government" loaf is best for hollowing out!)
Opt: fresh coriander 

Heat oil in largish saucepan, add onions and fry till soft and golden.Add chillies, garlic, ginger and spices. Fry together for 1 minute. Add vegetables (excluding green beans), chutney, sugar beans, stock and tomatoes. Cover and simmer for 20 minutes, add green beans and cook till vegetables are done. Check seasoning and go for it. Can top with some fresh coriander if you like to taste. If you try the hollowed out version, let me know how the eating went!!
