This is going to be the shortest post ever I suspect! I promised this recipe to a friend and though the promise has been SLOW in the keeping, here it is - Tina Bester's "Well behaved Pastry". You can bake it blind with no beans or filling. I still find it best if I have the time to freeze the pastry once it is in the tin, prior to baking, even if for only half an hour.
Well behaved Shortcrust Pastry
225g Butter
200g Castor Sugar
2 Large Eggs
500g Flour
Combine the butter and sugar in a food processor, then while the motor is still running add the eggs, one at a time. Add the flour and blend until it forms a dough. Do not overwork the dough. Refrigerate for at least 1 hour before using. Press the pastry into required tins or roll out, refrigerate or freeze for half an hour then bake at 180C for 10 minutes. Remove, add filling and continue as for chosen recipe.
I often freeze the unbaked pastry at this stage for later use - already pressed into pans.

You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
