Whoo Hoo..we have a camera...and even better....some internet. To celebrate, definitely something sweet and not too guilty a treat. I am quite addicted to these nuts just about any time of the day. Straight after breakfast, before lunch and for sure after supper when the sweet craving hits. Use a selection of nuts or just one sort; as you please. I prefer raw, unsalted nuts for health reasons, but if what you have is roasted and salted - use them! I make about 3 batches a week, they are sinfully delicious, I am hoping the novelty will wear off, just not too soon.
Honeyed Nuts
1 1/2 cups nuts (I use half each macadamia's, almonds and cashews or some pecans)
45ml honey
1t olive oil
Preheat oven to 180C. Mix all ingredients well and pour onto a baking sheet lined with baking paper. Bake for 15 minutes, stirring occasionally to coat the nuts. The honey should have caramelized and the nuts turned a deep golden colour. Allow to cool then store in an airtight container. I find they are a bit sticky when I store them, but as they settle the caramel hardens and the container needs a good whack to loosen them up.
Um, guys/ladies....that means a plastic container. If you whack a glass container....predictable results for which I take no responsibility!!
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
