Ginger Beer - Old fashioned refreshment

Ok, no photo, but give this one a try...just in time for Christmas day. Your shares will go up with family and friends alike as they quench their thirst. My shares will go down as I share Ouma's secret recipe...oh no I am safe, my sisters don't read this blog! I grew up drinking this ginger beer, and its a favourite. Stick to the rules and you won't have any exploding bottles. My problem is I never have any bottles for this as we don't drink fizzy cooldrink.

Makes 4L and a bit!

4Lwater
800ml sugar (up to 1000ml if want it sweeter next time)
3tsp dry yeast or one pkt brewers yeast
3tsp Jamaica ginger (available at p&p or Clicks)
Optional: a few raisins thrown in each bottle

Stir all ingredients together in a large containers till sugar has dissolved. Pour into cooldrink bottles but only fill 3/4 way. Close tightly and leave in cool place for 24 hours (not the fridge). I like to open them and allow some gas to escape if I keep them out the fridge after that. Refrigerate and just becareful when opening older bottles. You may need to "bleed" the gas off by opening and closing cap a few times so it does not bubble over. Tends to get a bit alcoholic if kept for too long, so not safe for young children after a week! Yum:)
