Tomato salad, sweetcorn fritters - anything goes

Well, the tomato salad looks so good you will just HAVE to want to eat it. I think the treatment works well on any tomatoes you want to use for a salad. Thanks Jamie Oliver!!!

 No photo of the fritters, but this recipe is good, healthy and uses minimal ingredients to feed 2 people. A great meal if you want to give bread a miss for lunch. Sometimes I realise just how much "bread type" food we are consuming. After Pizza's for supper last night,  today was a rest day...though there is some flour in the fritters.

So, back to food. Tomato salad first!

                                        Tomato Salad..aka knock your socks off tomato salad
As many tomatoes as you need. Try and get a variety of shapes, sizes and colours if the tomatoes are going to feature alone on the plate! Woolworths does a lovely punnet of heirloom type varieties. Slice in half or quarters, depending on size. Place into a colander or sieve, sprinkle generously with salt, shake well. Sprinkle again and leave to drain at least 15 minutes, half an hour is best - giving an occasional shake.
Sprinkle some fresh oregano or torn basil leaves over the tomatoes, turn onto a platter and dress with the following dressing:
3 parts olive oil to 1 part red wine vinegar, 1 clove garlic, chopped, 1 piece of chilli finely chopped, black pepper. Mix very well and pour over tomatoes and eat with joy and maybe some bread because who would want to leave those juices behind?
I tend to treat almost all tomatoes this way now...if I have time, before adding them to the average green salad. It makes quite a difference.

                                     Mealie and Zucchini (Baby marrow) fritters
Serves 2 for an easy lunch

1 mealie, kernels sliced off
1 zucchini, grated
1/2t coriander seeds, pounded and broken up
1/4t ground cumin
salt
70g flour
1 egg
1/4 cup milk or buttermilk
2T oil

Mix all the ingredients, except the oil. Be quite generous with the salt. Heat the oil in a frying pan and drop dollops of the raw mixture into the pan and allow to fry gently till set and golden before turning and completing the cooking process. Remove, serve with a squeeze of lemon or lime. I flash fried a few halved baby tomatoes in a knob of butter, seasoned them and served them over the fritters. Easy peasy and quite delicious.
