I think I will let that good looking photo occupy pride of place. Today is also vegetable soup recipe day, so this will be a long one! Thus less commentary and more food! The "untwist" is because there is zero effort involved. ENJOY.
Leek and Potato Pie
Feeds as many as you want it to, just increase quantities according to hunger. This amount was for hungry Charl and less hungry Marion
1 roll puff pastry, cut into 8 squares (note I only use 3 squares, so you could defrost half a roll)
4T olive oil
3 potatoes, washed and peeled (optional on the peeling)
3 large leeks, washed and sliced
smoked paprika (available at WW or deli's, the Spanish one is excellent)
Salt and pepper
50g goats cheese (optional)
Preheat oven to 200C. Put pastry on sheet and bake 10 minutes or until just starting to brown. Remove and top with:
Fry potatoes in 2T olive oil, with 1/2t paprika, salt and pepper. Fry leeks separately till soft (you can do it all in one pan, I just prefer it done separately). Add both together, stir briefly. Put 2-3 thin slices goats cheese on top of the pastry, top with potato and leek mix, bake till pastry lovely and golden.
You can add mushrooms or bits of butternut or some blue cheese. Whatever appeals!

So, it appears I don't want to give you the veg soup. Not true. Problem is, the recipe evolves each time depending on what is in the fridge.
Vegetable Soup
Gently fry 1 onion in olive oil. Add and fry: 2 chopped carrots, 1 stick celery, a handful of sliced green beans, some baby marrows if you have, a turnip if you have, 2 chopped potatoes. Add 1Litre vegetable stock (or plain water with salt and pepper and some herbs if you prefer). Add 1/2 cup dry soup mix and 1 tin chopped tomatoes and a tin of cannelini or kidney beans. Cook about 1/2 an hour. I sometimes liquidize half.
If you have the time and some ripe tomatoes, roast them and add instead of the canned ones. It really makes a difference, in which case toss in 1 or 2 onions as well.
Feel free to add any on the verge of expiry vegetables you have!
You see, so easy its embarrassing, I should have this very complicated recipe to make you all feel awestruck about my skills ha ha.
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
