You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
Free range, hormone free, Chickenless - Chicken Pie aka Cheese and onion Pie
My hubby commented that this Cheese and onion pie tasted just like chicken pie! Not too sure I agreed, but some friends he fed it to thought the same, so chicken-less chicken pie it is. Guess it was also a headless chicken? And footless, and featherless....ok I will stop!
So. I have gotten lazy with pastry, and tend to keep some Woolies butter rich puff pastry in the freezer, though I do still make my own when I have the time. The ready bought one comes flat packed in a box, 2 sheets per box. Only defrost one sheet for 2 people.
Cheese and Onion Pie
Serves 2 with ease
1 sheet pastry, halved
15ml olive oil
1 onion, chopped
190ml mature cheddar cheese, grated
3ml mustard powder or 7ml dijon mustard
5ml Worcestershire sauce
5ml dried origanum
salt and pepper
1 egg
Fry onions till soft and allow to cool. Mix all filling ingredients together and spread over one half of the pastry, leaving an edge uncovered. Brush the edge with some egg wash (egg yolk and water mixed), top with the other half of the pastry, gently press down. (At this point you could store it in the fridge for a couple of hours). Carefully cut some slits into the top layer, brush with egg and bake for 20 minutes @200C till golden brown. Yum
