Vegetable Cupcakes - Pink, white and tasty

Mm, what next? Since I cannot post recipes for bad stuff I am now reduced to recipes for savoury cupcakes? Though I did make some cute butterfly cupcakes for a birthday party. What ...you want to see them? Read to the end and have a look. These savoury "cakes" are a fun addition to the repertoire...and would work for guests. I found them too eggy, but then I am wary of quiches and frittata's anyway, and generally avoid. A normal person - that's you - would have no problem with the "eggy" I am quite sure.

I have a giant muffin pan which I used to make 4 "cakes". A normal muffin pan would no doubt produce 6-8 with these ingredients. If you are only 2 eating, halve the recipe. I don't think you would eat more than 1 large cupcake. Be daring and have some fun messing!

                                       Vegetable Cupcakes
Makes 4 giant muffin size

4 potatoes, peeled
1/2t whole grain mustard, optional
smoked salt (Optional, use plain if you don't have)
1/2 cup fresh cream (stingy)
50g Butter
3 beetroots, boiled and peeled
100g goats cheese
3 eggs
pepper
4 sheets phyllo pastry
Chives or parsley to garnish

Cook potatoes till soft. Mash well with butter and milk, season and add mustard if using. Brush each sheet of phyllo with butter and layer all four sheets on top of each other, then cut into 4 squares. Press the squares into an oiled muffin pan, trim the edges level with the pan and bake till brown, about 10 minutes at 180C. Remove and cool.
Mix the cream, eggs and goats cheese, season and pour into the oiled muffin pan, making 4. Slice the beetroot quite thinly and press into the egg mix. Bake for 20 minutes at 180C till set. The mixture will rise so leave a little space.
Spoon about a tablespoon of potato into the pastry case, top with the frittata (run a knife around the edge and use a spatula to lift the frittata out and directly into the pastry case), and spoon remaining potato on top. Brush with a little butter and grill till slightly browned. Sprinkle with chives and present with a bow and a flourish.
I use disposable gloves now when working with beetroot, I dislike the pink finger effect!!!
