Well, as you can see, this is not such pretty food. It tastes wonderful but looks a bit bland. Save it for home meals and look for pretty food for the visitors. I cannot decide if it is a curry or a spicy brown stew. Not eating meat means no more thick, aromatic stews that I love so much. This came close to reminding me of "brown stew". It is simple, good, easy cooking and leaves you feeling well fed and satisfied.
You could easily increase the potatoes to feed another 2 people with the amounts of everything else remaining the same. Enjoy:)
Potato and Lentil Coconut Curry?Stew?
Feeds 2 (or 4 with more potatoes added)
100g brown lentils, boiled for 15 minutes and drained
1T olive oil
1 onion, chopped
1 clove garlic, chopped
5ml fresh ginger, chopped
2ml fresh chilli, chopped OR 5ml curry powder
2 large potatoes, cubed
1 tin coconut milk
200ml vegetable stock
2 bay leaves
OPTIONAL:
1/2 cup peas
fresh coriander, chopped
Basmati Rice to serve
Tomato and onion sambal to serve
Fry the onion, garlic, ginger and chilli (if using), for 2 minutes. Add the curry powder (if using) and the potatoes and fry for 1 minute to develop flavours. Add coconut milk, stock and bayleaves, the peas (if using) and the lentils. Simmer until potatoes are soft. Take the lid off towards the end and turn the heat up a bit to allow sauce to thicken up if you feel it is too runny. DON'T burn the food though! Add coriander (if using) just before serving.
I use the curry powder and no coriander and somehow it seems more stew like than curry. Play around for yourself.
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
