Muesli - with a twist


 Yes, I have have posted this recipe or muesli before, but this week added a ridiculously easy sauce and some fruit as a topping and voila...pretty as you please so I decided to remind you to try it and be healthy. Who would choose boring old greasy eggs and bacon over this prettiness? Um...rather don't answer that.

This took me 7 minutes to make, including making the muesli. So its hardly time consuming while you are still in holiday mode

Anyway, this is pretty enough to welcome the New year with. Hopefully you will remember all those resolutions made...to eat healthier food this year, to make better food choices...buy organic and all that funny stuff.
The sauce is very simple, but a nice change from the usual honey.

For 2 greedy souls:
Blend together a handful of blueberries, a slice of mango and 1T honey. I used a stick blender. Taste and add more fruit or honey as you please. 

Layer muesli, yogurt, sauce and fruit and repeat.


A lovely idea I stole with my eyes: pack the still warm muesli into small tart tins lined with paper, allow to cool and set then place on pretty plate and fill with fruit etc. 








  Pan-fried Muesli

This recipe sort of makes itself up as you go along.

¼ cup Oil or Butter (grapeseed, almond, sesame, avocado, as well as sunflower oil - any of them work)
¼ cup honey or agave or sugar
1 cup oats
½ cup Nuts (Usually cashews or almonds)
1T Sesame seeds (optional)
1t Poppy seeds (optional)
½ cup Raisins or dried cranberries

Gently heat oil and honey
Add oats, nuts and seeds
Stir fry till oats start to toast – turn light brown
Turn heat off, add raisins and stir well to make sure the oats are not burning due to residual heat in pan.

NOTE: Use whatever other ingredients you like, eg. coconut, pumpkin seeds, cranberries etc.  Increase or decrease amounts and taste as you go if unsure about sweetness.
Keeps well and is ready as soon as it cools.
