Broccoli,cauliflower and Cheddar soup - rich and satisfying

Oh my goodness, typing in the "rich and satisfying" immediately made me think of the 'olden days' - you know, when dinosaurs walked the earth.... and we had cigarette ads at the movies. There was a brand that was "rich and satisfying". Whoops. I daresay this will be healthier for you all round, unless the thought of that combination really grosses you out. This soup is very tasty, very filling and supremely easy to make. You could do little toasted slice of baguette with melted cheese, to make it terribly posh for your guests or family. Whatever:) Publicly, my apologies to my daughter...I lied. There is cream in here after all!

                                        Broccoli, cauliflower and Cheddar soup 
10g butter
2 onions, finely chopped
10ml crushed garlic
300g broccoli, washed
300g cauliflower, washed
500ml vegetable stock
125ml cheddar cheese, grated
125ml cream
a pinch of nutmeg
salt and pepper

Pour a kettle of boiling water over the broccoli and cauliflower and leave to stand for about 3 minutes, then drain. Heat the butter, add the onion and garlic and gently saute until soft, about 5 minutes. Add the softened veg and stir for a few minutes to soften without allowing them to brown. Add the stock and simmer for 10 minutes. Blend till smooth, add remaining ingredients and blend again. Return to pot and keep warm, do not boil over high heat. At this stage, I added more stock as I found the soup too thick. Check your seasoning and dish up knowing all the daily goodness is dealt with in one bowl!!
