This bread is so tasty you probably don't need to waste your time making anything to accompany it! I made a Mushroom and Walnut Bisque (soup for us doffies) to go alongside this. Well, the soup was so grand it even had a little pastry lid...however... When I took the soup out the oven the pastry lid was baked but the soup was still cold - so back in the oven it went. Being hungry, Charl and I started on the warm bread, and just kept on going...you know...just one more little slice and so on and so forth. As then happens, we ate too much and when the soup got tasted we condemned it as a poor attempt! The idea had been to give you a soup recipe, and here you have bread instead. I hope your "National Soup Day" offering was better than mine. WHAT? You never knew the 31st of May is National Soup Day. Ai, you loser you!
This bread is really delicious just with butter, but would be perfect for a bread, cheese and wine trio. DO NOT SWITCH OFF because you can't make bread. Try it, you will be surprised at your prowess. And for goodness sake let me know how it turns out:)
Olive and Rosemary Bread
1 x 10g pkt instant yeast
250g bread flour
5g salt
5 olives, pitted and chopped
3 rosemary sprigs, finely chopped
200ml warm water
Flour for sprinkling
Combine the dry ingredients with the olives and rosemary. NOTE: Always mix the salt and the yeast in separately. Add enough warm water to make a soft dough and either knead in your mixer for 5 minutes, or turn out onto a board and knead by hand till smooth and elastic. Cover and leave in a warmish spot for 1 hour to rise. Knock dough down, roll into a rough heart shape, place on baking sheet. Using a sharp knife, cut one long slit down centre of dough, and about 3 more on either side so that it resembles a leaf. Pull the cut dough apart slightly so the holes are visible. Sprinkle with a little flour. Leave to rise for a further 30 - 40 minutes.Preheat oven to 200C. Bake for 15 minutes or until golden brown.
Try not to drool on the hot loaf as you run to the butter dish!!
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
