Ginger beer

Well, slowly I am trying to get this blog look a bit less like Grandma's favourite wall paper. If you know me you know I am technologically challenged in a big BIG way, so bear with me, you may find a new look every other week.
I am busy sorting all my ancient, falling apart recipe books and its reminding me of all the things I no longer make! So, tomorrow I plan to make Ginger Beer, the one I grew up drinking. No, NOT Frankies old fashioned, as we all know, Woolies tried that recipe..... Rather, the one my grandmother and mother made, that I could not bear having to wait 2 days to drink, once I saw it standing in the pantry. My children drank it as well, and now it seems like about 10 years since I last made it.
Sugar content? High! Yum factor? Cancels the sugar content ha ha. I know Summer is over, but we'll still have a few warm days, so try it and enjoy.

                                                Ginger Beer

4Litres water
4 cups sugar ( you can reduce down to 3)
1 packet instant yeast or 2/3 packet brewers yeast
3 tsp Jamaica Ginger ( Pick and Pay sells it, old Dutch medicine! Or the pharmacy or Clicks)

Stir all ingredients together till sugar has dissolved. Pour into screw top bottles, leave some room for expansion, so only fill 3/4's of the way. Leave 24 hours before refrigerating. If it has stood a while, open and close a few times to prevent it all fizzing out. I have even opened them all after 24 hours and then resealed just to let some pressure escape!
Hubby likes me to put some raisins in, but I think that is purely cosmetic as it reminds him of HIS childhood ginger beer.
