Olives and Nuts



Ok, so its Christmas holidays and I am as lazy as can be about updating. Seem to have been recycling old recipes, requires less thought and effort. Tried an interesting recipe for raw chocolate mint brownies this past week. Looked amazing but not as tasty as hoped. I will probably start including some "raw" recipes and alternatives to cheese in the new year, just to take you a step further in the healthy eating process!  So hang on to all your good resolutions to eat better this year (2012) and lets try it together.
However, just maybe you are having guests or going to a party on New Years eve and need to supply some snacks? These are two of my favourites so I hope you will also enjoy them. At least you can do some guilt free snacking and impress everyone with your contribution!! Its a good start to those resolutions...to STOP eating crisps...ha ha


ROASTED OLIVES 

500g Calamata Olives, drained
1 -3 red or green chillies, seeded and sliced
1 Garlic head, peeled*
3 Rosemary sprigs, snipped into pieces
125ml Olive oil
10ml Sugar

Preheat oven to 180C
Toss olives, chillies, garlic and rosemary together
Pour over oil and sprinkle sugar, mix well
Roast, uncovered, 30 min. Stir every 10 min.
Cool and serve. if bottling excess olives, you may need to add more oil to cover. They do keep well

*I use less garlic.
These are delicious as snacks, on pizza, in bread. In fact they are delicious full stop!!!

                               Tamari/Soya Nut Mix

250g mixed raw nuts (almonds, brazils, walnuts,pistacios, peanuts - as you please) 
125g pumpkin seeds
125g sunflower seeds
125g raw cashew nuts
125g raw macadamia nuts
100ml tamari or soya sauce (use the low salt one if possible)

Preheat oven to 140C. Line a large baking tray with non stick paper. Place all ingredients in a large bowl, toss together and leave for 10 minutes. Spread mixture into baking tray and bake for 20-25 minutes or until dry roasted. Give a stir around after 15 minutes. Cool completely and gobble or store in airtight container for up to 2 weeks.
