A lot of people are quite hesitant to cook vegetarian food when guests are coming for dinner. This will impress you, impress them and is relatively flop proof and easy to pre-prepare. The olives are optional, but do take time with your onions, its what makes the dish so special. Again, Woolworths does a great french butter pastry, or I have also done this in phyllo pastry, it just gets a bit soggy, so use at least 6 layers. Normally I do individual tarts, but one big one does work, as you see in the pic, this was a slice of one long tart.
Balsamic onion and olive Tarts
Makes 6 individual tarts
1 x 400g roll puff pastry and flour for dusting
18 olives, stones removed
8 medium onions, peeled and chopped into eighths
2T olive oil
200ml balsamic vinegar
300ml cream
2 large eggs
salt and pepper
Lightly roll pasrty, cut out 6 rounds to fit 10cm tart tins, lightly greased. Place in fridge to keep cold. Preheat oven to 180C.
Place oil and onions in a pan, get them frying gently, turn heat right down and caramelize for 20 minutes, stir occasionally. Add vinegar, boil, lower heat again and continue cooking for another 10 minutes till reduced and sticky. Dish onions into tart shells, top with 3 olives each and pour over the eggs and cream and seasoning. Bake for 30 minutes or until set and golden.

You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
