Decided to just ramble on about the various ways I cook vegetables to accompany all the other food. Maybe those steamed veg have lost their appeal by now?
One of our favourites is oven baked chips. Rinse and then slice your potatoes into chips, leave the skin on. Usually don't cut them too thin. Toss with 1T olive oil and some salt and if you want a generous dash of smoked paprika. Spread onto oven pan - I line with non stick baking paper to make washing up easy - and bake at 180C for half an hour, turning over half way through.
Mashed potato also works well with unpeeled potatoes, and adding some ready mixed mustard into your mash is a very tasty lift.
Green beans and broccoli usually get steamed for about 1 minute, drained then quick stir fry in a dollop of olive oil and some lemon zest, salt and pepper. Or fry a 1/2t mustard seeds in the oil till they start popping and add greens back to pan to heat through. Or fry a few almond flakes in the oil till starting to brown, add greens back to pan to heat through (don't forget salt and pepper).
Sweet potatoes I often wrap in baking paper and bake till soft- takes about an hour. Or slice and toss in 1Tolive oil, some fresh ginger. 1/2 T balsamic vinegar and roast till done.
Butternut is almost always roasted, either in chunks with some other veg or alone, in which case you can be quite generous with the garlic!! Otherwise I slice it lengthwise into 1/4's and brush with olive oil, coriander, garlic, salt and a bit of chopped fresh rosemary, and roast till soft.
Cabbage is usually finely sliced, blanched with about 2T water over high heat, and some oil or butter added and salt and pepper or a bit of crumbled veg stock. The cooking process is very fast.
Mushrooms can be rapidly fried, salt and pepper and a dollop of wholegrain mustard added and fried through.
Um, I think that's enough for today. Made delicious cauliflower souffle's last night, but we were to hungry for pics.....recipe to follow, though the dairy content is quite high!
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
