I said I would be back today, and here I am. Wonders never cease. Two of us did the damage to the tart above! Only after eating did Charl ask if I wanted a picture, so in this case the proof is in the photo... IT WAS GOOD! This tart uses very few vegetables and minimal effort and is very tasty. Even easier if the pastry from yesterday is already made. Of course, you could use any shortcrust pastry as well, even....shhhh......bought stuff!! Haven't tried it myself, but how bad can it be?
If you have been trying some of these recipes, I do hope you are starting to enjoy more meatless meals. Anyone out there still eating a plate of steamed veg? Shame, sounds ghastly ha ha
Vegetable Tart
1 x 15cm tart - fed 2 greedy people with enough for 1 the next day
1 ready baked pastry base
Filling:
30g butter or olive oil
4 spring onions, sliced
1/2 red pepper, sliced
60g broccoli florets
1 large potato, peeled and cubed
60g butternut, peeled and cubed
30g feta cheese, crumbled
140ml sour cream
2 egg yolks
salt and pepper
40g cheddar cheese, grated
Heat oil in pan, saute all vegetables for 10 minutes. Spoon into pastry shell and sprinkle feta over. Mix cream, yolks, salt and pepper together and spoon over vegetables. Top with cheddar cheese and bake 30 - 40 minutes @180C
Come on, you have to admit that is as easy as... um.... pie? In this case tart I guess. Enjoy. It is quite delicious and I just added some leaves tossed in lemon juice and olive oil, my favourite extremely lazy salad. Enjoy your 5 a day in 1 meal.
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
