So, as you will have gathered I NEVER offer you recipes containing soya mince or "meat" substitutes. What's the point really? But there are some comfort foods (my daughter will disagree on this one), from the meat eating days, that I long for. Cottage pie, easy, yummy, reminds me of winter nights on the farm and 3 hungry children! The pic is a bit messy looking, didn't like the alternative pic. Charl and I managed to do some serious damage to a large bowl of food, hope you also enjoy.
Quinoa is available at health stores or P&P. Great alternative to rice and it is HIGH in protein, so its an unusual grain.
Cottage Pie
Serves 4 hungry, slightly greedy, mouths.
50 ml Quinoa
30ml olive oil
2 leeks, sliced or 1 onion, chopped
1 stalk celery (optional), chopped
1 clove garlic, chopped
1 tin chopped tomatoes
3ml dried thyme leave or double fresh
5ml Marmite extract
1 carrot, diced
1/2 butternut, diced (not a huge one!)
1 red or green pepper, diced
90ml vegetable stock
4 large potatoes, peeled and quartered
milk and butter for mash, or olive oil
5ml wholegrain mustard
cheese for topping, optional
Heat oil, add leeks and garlic, fry gently. Add celery and fry one minute. Add remaining ingredients, simmer about 20 minutes till veg are soft and liquid absorbed. Boil potatoes till tender, drain and mash, add mustard, butter/olive oil and milk/water. Dish vegetable mix into an ovenproof dish, top with mash, sprinkle some grated cheese if using and bake 20 min until golden and bubbling.
You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
