Butternut and potato Latkes - in other words a hash orange

So, as you can see, not a hash brown, it IS orange. These are nice accompaniments to a salad for lunch in summer or to accompany whatever warm food you aim for in winter. For those less fond of butternut I will be nice and give you a plain old hash brown a la South African style, since I live here and not in the States. Forgive me, family living there if this is a desecration of your recipe!!!
                                     Potato, butternut and feta Latkes
Feeds many, use your discretion and reduce. I did half and made 8 latkes

3 Potatoes
1 butternut
1t parsley, chopped
100g feta, crumbled
50g flour
2 eggs
1 clove garlic, crushed
salt and pepper, don't be shy
oil to fry

Peel and grate potatoes and butternut. Wrap in clean kitchen towel and squeeze out excess liquid. Combine with remaining ingredients. Using two tablespoons shape flat cakes and carefully drop into hot, shallow oil. Fry approximately 2 minutes per side. (Can serve with 100ml  yogurt, juice of half a lemon and some chopped basil if want.)

                                              Hash Browns
Serves 4
6 medium potatoes, peel and grate
1 small onion, peel and grate
1 large egg
15ml flour
30ml chopped fresh herbs such as thyme and rosemary
3ml salt

Squeeze excess liquid out of grated potato and onion. Mix all ingredients and continue as above.

And now I am on a roll.....no, not because I am so fat from eating all this food, simply because I keep thinking about more "fritter" recipes. Last one, also good!

                                         Baby Marrow Fritters
2 cups coarsly grated baby marrows
salt
1/2 cup finely chopped onion
1/2 cup finely chopped parsley
2 large eggs
1/2 cup self raising flour
oil for frying

Place grated marrows in a colander, sprinkle with salt and leave 30 min to drain. Squeeze out any excess liquid. Add remaining ingredients and proceed as above. I normally add some extra salt and pepper as well.

Ok, you are all oily and greasy from frying food now, so go wash those hands before you touch your keyboard again!!
