A plate of veggies - and "beef stroganoff"

Yep,  we ate a plate of vegetables for supper on Monday night. The truth is out, vegetarians only eat a boring plate of veggies each night. Ha! Anything but boring. The recipes for this plate of vegetables will be below. The photo was missing the optional pine nuts, but they do make a nice addition if you have them.
Last night we had mashed potato with fake Beef Stroganoff. It's one of the meals I used to make a lot in the days of meat. Now I stick to the same recipe, but only use brown mushrooms, onions and garlic, no meat. Try it, it is really good.

I hope you have recovered from the sugar high from eating brownies....and READ the bread recipe, you will be surprised how easy it is!

Serves 2:
Roast in one smallish dish:
1/2 a red pepper
1 sweet potato cut into chunks
1/2 small butternut cut into slices
2 small onions cut in half
juice of 1/2 orange or naartjie
olive oil
salt and pepper

Roast for about 25 min @180C

Part 2:
Peel as many potatoes as you think 2 will eat!
I do about 4 baby for Charl and 3 for myself as they are so yum
Parboil 5 minutes, then roast about 20 min in olive oil
THEN the nice part....
Partly squash each potato with your potato masher, sprinkle salt and either;
 chopped up fresh rosemary (1tsp) or some orange rind
Pour over about 1 1/2 T Balsamic vinegar and roast again for 20 min, turning 1/2 way through

Part 3:
Roast a few baby beets with oil and balsamic vinegar

Part 4:
Cook a little brown rice with some veggie stock

Optional:
Roast a few pinenuts and/or pumpkin seeds.
On this plate I also put some blanched spinach mixed with parmesan cheese into raw brown mushrooms, drizzled some oil over and baked for 15 minutes.

Serve roast veg on rice, with seeds scattered on, and add the rest

YOU will want to lick your plate, so don't resist.

  1. And what pray tell is the recipe for your "beef stroganoff"? I know you and whatever you do will make it taste a hundred times better than any cookbook!
