You and your family and friends need not fear an empty plate when excluding meat! Eating vegetarian food is anything but boring. There is no reason to eat a plate of boiled veggies night after night simply because you want to stop eating meat. Hopefully this blog will offer you some suggestions, encourage you to experiment and be brave. I am having fun and sometimes the result is great and sometimes not. At least try.
Cauliflower soup - for all the soup addicts
It is so great to chat with some of you and get comments about the recipes. You are all so encouraging! What nice friends I have. Glad the tomato soup was a hit and I get the hint.... more soup recipes! In this freezing weather, I agree, it is the most practical and satisfying meal.
Cauliflower soup is one of the recipes I have avoided for years. Somehow the thought of that smell and the resulting whitish "sludge" was so off putting I never wanted to consider it. Last year when we visited my son in Norwich we ate cauliflower soup that was truly good, so I decided to attempt revising my attitude.
The good news is - no smelly house, no sludge and minimal effort for happy faces and empty plates. What an irresistible offer. This recipe is from Food and Home Entertaining.
Cauliflower soup
Serves 6
80 g butter
500g cauliflower florets
1 onion, chopped
1 clove garlic, chopped
1 sprig fresh thyme
400ml milk, heated
400ml vegetable stock
Truffle oil, optional (Woolies sells this, or P&P, expensive but tasty!)
Salt and pepper
Heat the butter, add cauliflower and stir well to coat, cover and cook gently for 10 minutes. Add onion, garlic and thyme, stir, cook gently for 5 minutes. Add liquids, bring to boil and cook about 20 minutes until cauliflower is tender. Liquidize in blender and reheat, stir through about 1T truffle oil if using and check seasoning. That's it!!!!
