Thai Green curry - emergency food


Well, last night we were meant to be going for supper at the Constantia market, so I happily prepared zip, zero, nothing for supper. But the joys of Cape Town traffic threw those plans out on all fronts, so at 6pm I had to make a quick plan to get supper on the table. Hint!!! ALWAYS have a packet of Woolworths Green curry paste and a can of coconut milk in your cupboard. Gets you out of trouble in 15 minutes flat. No Woolworths? Well, the bottles of green curry paste work well, you just have to add a few extra things, or else I do indeed have a recipe that I use when I am feeling very virtuous. Ask if you want it:)
I tend to add a bit of lime juice and a dash of fish sauce to the packet stuff, otherwise it is as simple as I make it sound. Use whatever vegetables you have, the recipe below merely reflects what I had last night. Enjoy.

 Thai Green Vegetable Curry
1T olive oil
1 small onion , sliced
1 Packet Green curry paste
1 Can coconut milk
1 small sweet potato, cubed
1/2 punnet fresh peas
1/2 punnet broad beans
few green beans , sliced
1 baby marrow, thickly sliced
Few stems broccoli
Few basil or coriander leaves, chopped
Optional: 1 T lime juice and 1T fish sauce

Heat oil, gently fry onion for 1 minute, add paste and fry 1 minute. Add coconut milk then all vegetables and cook 10 minutes or until just tender, Add leaves. (Add optional sauces now as well.) Serve with some basmati rice, though I use brown basmati or plain brown rice, or quinoa to up your protein intake.

Come on, admit it, this must be the easiest recipe you EVER saw!
